  • 2 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth Use low-sodium for a healthier option.
  • 3 packs ramen noodles Discard seasoning packets.
  • 1 cup fresh spinach Can add more vegetables if desired.
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream Can substitute with low-fat milk or Greek yogurt.
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce Use low-sodium for a healthier option.
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • to taste Chopped green onions for garnish

Method
 

Cooking Chicken and Broth
  1. In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned and cooked through. Remove chicken from the pot and set aside.
  2. In the same pot, add the minced garlic and cook until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the ramen noodles and cook according to package instructions, usually about 3 minutes.
Finishing the Dish
  1. Meanwhile, slice the cooked chicken into strips and add it back to the pot along with the spinach, mushrooms, heavy cream, and soy sauce. Stir until the spinach is wilted and everything is heated through.
  2. Season with salt and pepper to taste.
  3. Serve hot, garnished with chopped green onions.

Notes

For a lighter option, use less heavy cream and add more vegetables. Store leftovers in an airtight container for up to 3 days. Freeze only the broth and chicken for better texture.
