Ingredients
  

Cranberry-Orange Topping
  • 12 ounces fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1 tablespoon orange zest
  • 1/4 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • pinch salt
Brie Assembly
  • 1 sheet puff pastry, thawed
  • 1 8-ounce wheel brie cheese
  • 1/4 to 1/2 cup chopped pecans or walnuts
  • 1 to 2 tablespoons honey
  • 1 egg beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)
For Serving
  • assorted crackers, toasted baguette slices

Method
 

Preparation
  1. In a small saucepan over low heat, combine the cranberries, sugar, orange zest, orange juice, vanilla extract, cinnamon, and salt. Cook for 5 to 8 minutes until thickened, then cool completely.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and unfold puff pastry onto the sheet.
Assembly
  1. Place brie in the center, top with 1/2 cup cranberry mixture, drizzle with honey, and sprinkle with nuts.
  2. Fold pastry over brie, seal seams, flip seam-side down. Brush with egg wash and sprinkle coarse sugar.
Baking
  1. Bake for 25 to 28 minutes until golden brown.
  2. Rest for 5 minutes before serving with crackers and baguette.

Notes

For a healthier option, use whole grain crackers and reduce sugar in the cranberry topping. You can also freeze the unbaked pastry for up to 1 month and bake it later.
