Preparation
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Combine melted butter, cranberries, brown sugar, and cinnamon in a bowl.
- Roll out puff pastry and cut each sheet into 6 rectangles.
- Spread fig preserves in the center of each rectangle.
- Top with 2 slices of Brie.
- Spoon cranberry mixture over Brie and press gently.
- Fold edges slightly inward and brush with beaten egg.
- Sprinkle with coarse sugar.
- Bake for 15 to 20 minutes until golden and puffed.
- Sprinkle with fresh thyme and serve warm.
Notes
These bites are best served warm to ensure the Brie is soft and melty. They can be frozen unbaked for up to 2 months and baked from frozen with additional time.
