Ingredients
  

For the filling
  • 2 cups fresh cranberries
  • 1 tablespoon salted butter, melted
  • 2 to 4 tablespoons brown sugar Adjust based on sweetness preference
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup fig preserves For spreading
  • 16 ounces Brie cheese, cut into 24 slices
For assembly
  • 2 sheets frozen puff pastry, thawed
  • 1 large egg, beaten For egg wash
  • 1 tablespoon coarse sugar For sprinkling on top
  • 1 tablespoon fresh thyme leaves For garnish

Method
 

Preparation
  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Combine melted butter, cranberries, brown sugar, and cinnamon in a bowl.
  3. Roll out puff pastry and cut each sheet into 6 rectangles.
  4. Spread fig preserves in the center of each rectangle.
  5. Top with 2 slices of Brie.
  6. Spoon cranberry mixture over Brie and press gently.
  7. Fold edges slightly inward and brush with beaten egg.
  8. Sprinkle with coarse sugar.
  9. Bake for 15 to 20 minutes until golden and puffed.
  10. Sprinkle with fresh thyme and serve warm.

Notes

These bites are best served warm to ensure the Brie is soft and melty. They can be frozen unbaked for up to 2 months and baked from frozen with additional time.
