Salad Ingredients
  • 4 cups fresh corn (or canned/frozen corn)
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1/4 cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish Add as needed for garnish.

Method
 

Preparation
  1. In a large bowl, combine the corn, crumbled bacon, and cheddar cheese.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, salt, and pepper.
  3. Pour the dressing over the corn mixture and stir until well combined.
  4. Garnish with chopped green onions before serving.

Notes

This salad can be customized with added proteins or veggies and can serve as a side for a variety of dishes. Best stored in the refrigerator for 3-4 days.
