Preparation
- Heat the olive oil in a large pot over medium-high heat.
- Season the beef chuck roast with salt and black pepper.
- Sear all sides of the beef until browned.
Cooking
- Add the beef broth, minced garlic, Worcestershire sauce, and dried thyme to the pot.
- Cover and simmer for 2 1/2 to 3 hours until the beef is fork-tender.
Mashed Potatoes
- Boil the cubed potatoes in salted water for approximately 15 minutes until soft.
- Mash the potatoes with butter, milk or cream, salt, and pepper until smooth and fluffy.
Roasting Vegetables
- In a separate pan, toss the baby potatoes, chopped carrots, and broccoli florets with olive oil, salt, and pepper.
- Roast or sauté the vegetables until tender.
Assembly
- Arrange the pot roast on a serving plate.
- Top the mashed potatoes with gravy and serve the roasted vegetables on the side.
Notes
To make this dish healthier, consider using less butter and skim milk. Leftover pot roast can be used in sandwiches or salads.
