  • 2 cups all-purpose flour (or gluten-free flour) Gluten-free option available
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk Any type of milk can be used
  • 1 large egg For binding
  • 1 tablespoon olive oil For added flavor

Preparation
  1. In a mixing bowl, combine the cottage cheese, milk, and egg until smooth.
  2. In another bowl, mix together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until it becomes smooth.
  5. Divide the dough into equal portions and roll each into a flatbread shape.
Cooking
  1. Heat a skillet over medium heat and cook each flatbread for about 2-3 minutes on each side or until golden.

Notes

Store prepared flatbreads in an airtight container in the refrigerator for up to three days. They can also be frozen with layers of parchment paper in between to prevent sticking. Reheat in a skillet or air fryer for best results.
