Method
 

Preparation
  1. Boil the diced russet potatoes in salted water until tender, about 15 minutes. Add baking soda for fluffiness. Drain and cool slightly.
  2. In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Sauté the diced onion until translucent, about 5 minutes. Stir in minced garlic and cook for another 1-2 minutes.
Cooking
  1. Add cooked potatoes to the skillet. Sprinkle in onion powder, garlic powder, salt, pepper, and paprika. Cook without stirring for a few minutes to form a crispy bottom.
  2. Mix in the cubed cooked corned beef. Stir gently and cook for 5-7 minutes, stirring occasionally until heated through and crispy.
Serving
  1. Fry eggs to your liking and top each serving of corned beef hash with a fried egg.

Notes
