  • 12 oz bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, chopped
  • 1 large bell pepper, chopped (various colors)
  • 1 small red onion, chopped
  • 1/2 cup black olives, sliced
  • 4 oz feta cheese, crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
Garnish
  • 1/4 cup fresh basil, chopped For garnish

Method
 

Preparation
  1. Cook bow tie pasta according to package instructions, then drain and rinse in cold water.
  2. In a large bowl, combine the pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and gently toss to combine.
  5. Garnish with fresh basil and serve immediately, or refrigerate for later use.

Notes

Store the salad in an airtight container in the fridge for 3 to 4 days. Do not freeze the salad as it will make the vegetables soft and the cheese crumbly.
