Main Ingredients
  • 3 pieces ripe bananas Look for bananas with dark spots for best flavor.
  • 1/3 cup honey Can substitute brown sugar if desired.
  • 1/4 cup melted butter Make sure it's melted before mixing.
  • 1 piece egg Can replace with a flax egg if needed.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 teaspoon baking soda Leavening agent for the bread.
  • a pinch salt Enhances flavor.
  • 1 cup all-purpose flour Can substitute with a gluten-free flour blend.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the honey, egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour and mix until just incorporated. Don’t overmix.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Store the cooled loaf in an airtight container or wrap it in plastic wrap. Keeps well for up to 3 days at room temperature.
