Preparation
- Place butterfly pea flowers in a heatproof jug and add boiling water. Steep for 30 minutes.
- Strain out the flowers and freeze the blue water into ice cubes.
- Freeze an additional 2 cups of regular water into ice cubes.
- Once the ice cubes are frozen, blend the blue ice cubes in a high-speed blender, leaving a few larger chunks for texture.
- Repeat the blending process with the regular ice cubes.
- Store the blue and regular ice in separate containers in the freezer until ready to use.
Serving
- In tall glasses, fill halfway with regular ice cubes.
- Add the butterfly pea ice cubes on top.
- Squeeze 1 tablespoon of citrus over each glass to trigger the color change.
- Top with your favorite sparkling drink and stir gently to mix.
Notes
For optimal presentation, serve in tall clear glasses and offer extra citrus wedges and mint sprigs as garnishes. Pair with a light meal for a refreshing experience.
