Preparation
- Preheat the oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, and mix well.
- Stir in the flour until just combined.
- In a separate bowl, mix the cinnamon and brown sugar.
- Pour half of the batter into the loaf pan, sprinkle half of the cinnamon-sugar mixture on top, and then add the remaining batter.
- Sprinkle the rest of the cinnamon-sugar mixture on top and use a knife to swirl the mixture slightly.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve this bread warm or at room temperature. Great with butter, cream cheese, honey, or maple syrup. Store at room temperature for up to 3 days, or freeze for up to 3 months.
