Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas, mashed Use very ripe bananas with brown spots for the best flavor.
  • 1/3 cup melted butter Can substitute with neutral oil if preferred.
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can reduce by 1/4 cup for a less sweet loaf.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can use gluten-free flour blend as a substitute.
Cinnamon Swirl Mixture
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt.
  4. Add the sugar, beaten egg, and vanilla extract, and mix well.
  5. Stir in the flour until just combined.
  6. In a separate bowl, mix the cinnamon and brown sugar.
  7. Pour half of the batter into the loaf pan, sprinkle half of the cinnamon-sugar mixture on top, and then add the remaining batter.
  8. Sprinkle the rest of the cinnamon-sugar mixture on top and use a knife to swirl the mixture slightly.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve this bread warm or at room temperature. Great with butter, cream cheese, honey, or maple syrup. Store at room temperature for up to 3 days, or freeze for up to 3 months.
