  • 1.5 cups chopped strawberries Fresh strawberries, chopped
  • 1 cup plain Greek yogurt Can use low-fat or non-fat
  • 1 tbsp honey Can substitute with sugar-free sweetener
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips Can use dark chocolate for a healthier option
  • 2 tbsp coconut oil

Method
 

Preparation
  1. In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix everything thoroughly until well combined.
  2. Take scoops of the yogurt mixture (about 2 tbsp each) and place them on a parchment paper-lined baking sheet or large plate to form the clusters.
  3. Place the baking sheet with the yogurt clusters in the freezer. Let them freeze until they are completely solid, which should take about 1-2 hours.
Coating
  1. While the clusters are freezing, add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave them in 15 or 30-second intervals, stirring in between, until the chocolate is completely melted.
  2. Once the yogurt clusters are fully frozen, remove them from the freezer. Carefully dip each one into the melted chocolate using a spoon to ensure it is fully coated.
  3. After coating with chocolate, place each cluster back on the prepared baking sheet. If desired, sprinkle a little sea salt over the clusters.
Final Steps
  1. Return the clusters to the freezer for a few more minutes to let the chocolate harden and the yogurt solidify slightly.
  2. Once ready, enjoy your delicious chocolate strawberry yogurt clusters!

Notes

Store leftover clusters in an airtight container in the freezer for up to a month. These clusters make a great meal prep option.
