Preparation
- In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix everything thoroughly until well combined.
- Take scoops of the yogurt mixture (about 2 tbsp each) and place them on a parchment paper-lined baking sheet or large plate to form the clusters.
- Place the baking sheet with the yogurt clusters in the freezer. Let them freeze until they are completely solid, which should take about 1-2 hours.
Coating
- While the clusters are freezing, add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave them in 15 or 30-second intervals, stirring in between, until the chocolate is completely melted.
- Once the yogurt clusters are fully frozen, remove them from the freezer. Carefully dip each one into the melted chocolate using a spoon to ensure it is fully coated.
- After coating with chocolate, place each cluster back on the prepared baking sheet. If desired, sprinkle a little sea salt over the clusters.
Final Steps
- Return the clusters to the freezer for a few more minutes to let the chocolate harden and the yogurt solidify slightly.
