Ingredients

Main Ingredients
  • 1 cup Chocolate Sourdough Starter The backbone of this recipe, combining flour and cocoa.
  • 1 cup Warm Water Helps activate the sourdough starter.
  • 3 cups All-Purpose Flour Provides structure to the bread.
  • 1/2 cup Raw Cacao Powder Gives the bread its chocolatey flavor and lower sugar content.
  • 2 tbsp Sugar Balances the bitterness of the cacao.
  • 1 tsp Salt Enhances the flavor and controls yeast activity.

Method

Preparation
  1. Combine the chocolate sourdough starter and warm water in a large bowl, mixing thoroughly until the starter is fully dissolved in the water.
  2. Gradually add all-purpose flour, raw cacao powder, sugar, and salt to the starter mixture. Stir well until a dough forms without dry flour pockets.
  3. Transfer the dough onto a floured surface and knead it for about 10 minutes until achieving a smooth, elastic texture.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 4-6 hours, or until it has doubled in size.
  5. While the dough is rising, preheat the oven to 375°F (190°C).
  6. Punch down the dough to release gases, then shape it into a loaf and place it in a greased bread pan.
  7. Allow the dough to rise for another 30-60 minutes in the pan, covered with a kitchen towel.
  8. Bake in the preheated oven for 30-35 minutes, or until the bread sounds hollow when tapped on the bottom.
  9. Let the bread cool for at least 15 minutes before slicing to allow the flavors to settle.

Notes

For meal prep, slice and store portions in airtight bags or containers in the freezer. Enjoy with almond butter or Greek yogurt for added protein. Consider variations like adding nuts or dried fruits.
