Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, salt, and 1/2 teaspoon pumpkin spice.
- In another large bowl, mix the vegetable oil, eggs, canned pumpkin puree, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fill the cupcake liners about two-thirds full with the batter.
- Bake for 20-25 minutes, checking with a toothpick to ensure it's clean when done.
- Cool the cupcakes in the pan for about 5 minutes before transferring them to a wire rack.
Frosting
- Beat the softened cream cheese and unsalted butter together until smooth.
- Gradually add powdered sugar and the remaining 1 teaspoon of pumpkin spice, mixing until well combined.
- Once the cupcakes are cooled, frost each cupcake generously with the pumpkin spice cream cheese frosting.
Notes
For a healthier frosting, consider using Greek yogurt instead of cream cheese. These cupcakes are great for meal prep and can be stored in an airtight container in the refrigerator for up to a week.
