Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, salt, and 1/2 teaspoon pumpkin spice.
  3. In another large bowl, mix together vegetable oil, eggs, pumpkin puree, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Fill the cupcake liners about two-thirds full with the batter.
  6. Bake in the preheated oven for 20-25 minutes. Check for doneness with a toothpick.
  7. Once baked, let the cupcakes cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Frosting
  1. Beat cream cheese and unsalted butter together until smooth and creamy.
  2. Gradually incorporate powdered sugar and the remaining 1 teaspoon of pumpkin spice until well mixed.
  3. Once cupcakes are cool, generously frost each with the pumpkin spice cream cheese frosting.

Notes
