Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a loaf pan to prevent sticking.
Mixing
  1. In a mixing bowl, combine grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract, mixing until well-blended.
  2. In another bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
Baking
  1. Fold in the chocolate chips.
  2. Pour the batter into the prepared loaf pan, smoothing the top.
  3. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the bread to cool for about 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Choose small to medium zucchini for best texture. Wrap and store in an airtight container for 3-4 days at room temperature, or up to a week in the refrigerator. You can also freeze slices for a later treat.
