Preparation
- Preheat the oven to 350°F (175°C).
- Grease a loaf pan to prevent sticking.
Mixing
- In a mixing bowl, combine grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract, mixing until well-blended.
- In another bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
Baking
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool for about 10 minutes in the pan before transferring to a wire rack to cool completely.
Notes
Choose small to medium zucchini for best texture. Wrap and store in an airtight container for 3-4 days at room temperature, or up to a week in the refrigerator. You can also freeze slices for a later treat.
