  • 1/2 cup coconut oil (melted)
  • 1/3 cup maple syrup or honey (for a low-calorie sweetener)
  • 1 tsp vanilla extract
Mix-ins
  • 1/2 cup dark chocolate chips (choose a low-sugar option to make them diabetic-friendly)
  • 1/4 cup chopped nuts (optional for added protein and healthy fats)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, oat flour, baking soda, and salt until combined.
  3. In another large bowl, mix melted coconut oil, maple syrup, and vanilla extract. Stir until well combined.
  4. Gradually add the dry ingredients into the wet ingredients and mix until just combined. Don't overmix.
  5. Fold in the dark chocolate chips and nuts if using.
  6. Use a cookie scoop to drop dough onto the prepared baking sheet, spaced about 2 inches apart.
Baking
  1. Bake for 10-12 minutes until the edges are golden. The centers may look slightly underbaked, but they will firm up once cooled.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be paired with almond or oat milk, or served with sliced fruits for a balanced snack. To control portion sizes, consider making mini cookies instead of regular-sized ones.
