  • 2 medium zucchini, sliced Fresh zucchini for a light texture
  • 2 tablespoons olive oil For cooking, can reduce for lower calories
  • 3 cloves garlic, minced Fresh garlic adds flavor
  • 1 tablespoon soy sauce Low-sodium alternative recommended for less salt
  • to taste none Salt and pepper Adjust to personal preference

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and zucchini to the skillet.
  4. Stir-fry for about 3-4 minutes until the zucchini is tender.
  5. Drizzle with soy sauce and season with salt, pepper, and optional red pepper flakes.
  6. Stir to combine and cook for another minute.
  7. Serve warm.

Notes

For best results, dry the chicken well before slicing. Do not crowd the pan; cook in batches if needed. You can add lemon juice or sesame oil for extra flavor if desired.
