Preparation
- In a bowl, combine the diced chicken, chopped romaine lettuce, Caesar dressing, salt, and pepper. Mix well.
- Place the chicken mixture on one slice of bread.
- Top with the other slice of bread.
Cooking
- If desired, grill the sandwich for a couple of minutes on each side until golden brown.
- Press gently while grilling to make the top crisp.
- Watch closely to avoid burning the bread.
- Remove when the bread is golden and the filling is warm.
Serving
- Garnish with Parmesan cheese and serve immediately.
Notes
You can store the filling for later use. Keep in an airtight container in the fridge for up to 2 days; store lettuce separately to maintain crispness. Do not freeze once mixed with lettuce.
