Preparation
- Pit the fresh cherries and set aside. If using frozen cherries, add them directly to the pan.
- In a large skillet or saucepan, combine light brown sugar, granulated sugar, and lemon juice over medium heat. Stir until sugars dissolve and mixture begins to simmer.
Cooking
- Add the prepared cherries to the skillet and cook for about 5–7 minutes, stirring occasionally.
- In a small bowl, combine cornstarch and water to create a slurry. Stir into the cherry mixture and cook for an additional 1–2 minutes until thickened.
- Remove from heat and carefully pour in the Kirsch. Ignite the alcohol with a long match or lighter.
- Allow the flames to burn off naturally for about 30 seconds.
Serving
- Once the flames extinguish, spoon the warm cherries and sauce over scoops of vanilla ice cream.
Notes
You can experiment with other fruits like peaches or berries. Store leftover cherry mixture in the fridge for up to three days. Reheat before serving.
