  • 4 cups diced potatoes (fresh or frozen)
  • 1 cup plain Greek yogurt for a healthier twist
  • 1 can cream of chicken soup or a low-sodium version
  • 2 cups shredded cheese cheddar or low-fat cheese
  • 1 cup cornflakes or gluten-free breadcrumbs for topping
  • 1/2 cup green onions chopped
  • Salt and pepper to taste

Preparation
  1. Preheat your oven to 350°F (175°C). If you’re using an air fryer, set it to 375°F (190°C).
  2. In a large bowl, combine the diced potatoes, Greek yogurt, cream of chicken soup, half of the shredded cheese, green onions, salt, and pepper.
  3. Mix all the ingredients until well combined.
  4. Transfer the mixture into a greased baking dish, spreading it evenly.
  5. Sprinkle the remaining cheese on top.
  6. For a crunchy topping, sprinkle cornflakes or gluten-free breadcrumbs over the cheese.
  7. Bake in the oven for 30-35 minutes or until bubbly and golden brown. If using an air fryer, cook for about 20-25 minutes, checking to ensure it doesn't burn.
  8. Let it cool for a few minutes before serving.

Notes

Serve with grilled chicken or baked fish for a balanced meal. Store in an airtight container in the refrigerator for up to 3 days or freeze portions for up to 3 months.
