Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together the cottage cheese and eggs until smooth.
- Stir in the shredded cheese and diced vegetables.
- Season with salt and pepper to taste.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
Baking
- Bake for 20-25 minutes, or until the egg bites are set and slightly golden.
- Allow to cool slightly before removing from the muffin tin.
Serving
- Serve warm or store in the refrigerator for meal prep.
Notes
These bites are great for meal prep and can be stored in the refrigerator for up to five days or frozen for three months. Reheat in the microwave or air fryer.
