Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, egg, salt, and pepper. Mix until well combined, being careful not to over-mix.
- Form the mixture into meatballs about 1 inch in diameter.
Cooking
- In a skillet over medium heat, add a drizzle of oil. Cook the formed meatballs until browned on all sides, about 8-10 minutes.
- Once browned, add the marinara sauce to the skillet and stir gently to coat the meatballs. Cover and let simmer for about 10 minutes.
Assembly
- Slice the hoagie rolls open and place them cut side up on a baking sheet.
- Fill each hoagie roll with a few meatballs and some marinara sauce, then top generously with shredded mozzarella cheese.
- Toast the subs in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Serving
- Remove from the oven, let them cool slightly, and serve hot.
Notes
These subs are great for meal prep! Store leftovers in an airtight container for up to three days. You can customize your subs with sautéed peppers and onions.
