Preparation
- Preheat your oven to 375°F (190°C) and lightly grease your baking dish.
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, black pepper, Worcestershire sauce, and half of the ketchup. Mix well.
- Press the meat mixture evenly into the prepared baking dish and spread the remaining ketchup on top.
- Bake for 20-25 minutes, until the meat is cooked through.
- Spread the mashed potatoes evenly over the meatloaf layer, then add the shredded cheese and crumbled bacon.
- Return the casserole to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from oven, garnish with green onions or chives if desired, and allow to cool slightly before slicing and serving.
Notes
For a healthier version, use ground turkey or chicken. Perfect for meal prep; store leftovers in an airtight container for up to three days.
