Ingredients
  

Main Ingredients
  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz pasta (rotini or your favorite shape)
  • 1 cup heavy cream Can be substituted with low-fat milk or dairy-free cream
  • ½ cup chicken broth
  • 1 cup shredded mozzarella cheese Can use low-fat cheese for lighter option
  • ½ cup shredded cheddar cheese Can reduce amount for lower calories
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste Salt and black pepper
  • to taste Fresh parsley, chopped (for garnish)

Method
 

Cooking Pasta
  1. Cook the pasta in salted boiling water until al dente, then drain and set aside.
Cooking Chicken
  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Cook for 6–7 minutes until golden and cooked through, then remove from skillet.
Making Sauce
  1. Melt butter in the same skillet. Add garlic and sauté for 1 minute.
  2. Pour in chicken broth and heavy cream. Simmer gently.
  3. Stir in mozzarella, cheddar, and Parmesan until smooth and melted.
Combining Ingredients
  1. Add cooked chicken and pasta back into the skillet.
  2. Toss to coat and simmer for 2–3 minutes.
  3. Garnish with fresh parsley and serve hot.

Notes

For meal prep, store in airtight containers in the fridge for up to 3–4 days. Can freeze portions in freezer-safe containers for up to 2 months.
