  • 1/2 teaspoon garlic powder Enhances flavor without added calories.
  • 1/2 teaspoon onion powder Offers antioxidants and may help with blood sugar control.
  • 1/2 teaspoon paprika Contains beneficial antioxidants.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the rice according to the package directions.
  3. Lightly steam fresh broccoli florets until just tender, or thaw frozen broccoli and drain excess water.
Mixing the Sauce
  1. In a large mixing bowl, whisk together the cream of chicken soup, sour cream (or Greek yogurt), milk, garlic powder, onion powder, paprika, salt, and pepper.
Combining Ingredients
  1. Stir in the cooked chicken, rice, steamed broccoli, and 1 cup of the shredded cheddar cheese until well mixed.
Assembly
  1. Spread the mixture evenly into a 9x13-inch prepared baking dish.
  2. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Optional Topping
  1. If using breadcrumbs, mix with melted butter and sprinkle over the casserole.
Baking
  1. Bake uncovered for 25–30 minutes, until heated through and cheese is bubbling and golden brown.

Notes

The casserole can be prepared ahead and stored in the fridge for up to 3 days before baking. Leftovers can be stored in an airtight container for up to 4 days and reheated in the microwave or oven. This dish freezes well; assemble but do not bake and freeze for up to 3 months.
