Preparation
- Preheat your oven to 375°F (190°C).
- Cook the rice according to the package directions.
- Lightly steam fresh broccoli florets until just tender, or thaw frozen broccoli and drain excess water.
Mixing the Sauce
- In a large mixing bowl, whisk together the cream of chicken soup, sour cream (or Greek yogurt), milk, garlic powder, onion powder, paprika, salt, and pepper.
Combining Ingredients
- Stir in the cooked chicken, rice, steamed broccoli, and 1 cup of the shredded cheddar cheese until well mixed.
Assembly
- Spread the mixture evenly into a 9x13-inch prepared baking dish.
- Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Optional Topping
- If using breadcrumbs, mix with melted butter and sprinkle over the casserole.
Baking
- Bake uncovered for 25–30 minutes, until heated through and cheese is bubbling and golden brown.
Serving
- Let the casserole rest for at least 5 minutes before serving.

Notes
The casserole can be prepared ahead and stored in the fridge for up to 3 days before baking. Leftovers can be stored in an airtight container for up to 4 days and reheated in the microwave or oven. This dish freezes well; assemble but do not bake and freeze for up to 3 months.
