Method
 

Preparing the Ingredients
  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for about three minutes until soft and slightly translucent.
  2. Add ground beef to the skillet, sprinkle taco seasoning over it, and cook until no pink remains, draining excess grease.
Making the Cheese Sauce
  1. In the same pan, melt unsalted butter over medium heat, add flour, and whisk for 1-2 minutes to form a roux.
  2. Slowly pour in room temperature milk while whisking continuously to avoid lumps until the mixture thickens.
Finishing the Tacos
  1. Add Rotel with its juices to the cheese sauce, reduce heat, and stir in shredded cheddar until melted.
  2. Mix in the beef, add sour cream and optional hot sauce, adjusting seasonings with salt and pepper.
  3. Heat soft tortillas until warm, fill with the mixture, and top with diced tomatoes and chopped cilantro. Serve immediately.

Notes

For a healthier option, use leaner ground beef or turkey. These tacos are perfect for meal prep and can be stored in the fridge for up to 3 days. Customize by adding black beans or using cauliflower tortillas for a low-carb option.
