Ingredients
  

For the Meatloaf
  • 2 pounds ground beef You can substitute with ground turkey for a lighter option.
  • 1 cup breadcrumbs Can be substituted with crushed crackers, oats, or cooked rice.
  • 1/4 cup ketchup Plus more for glazing.
  • 2 tablespoons mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup finely chopped onion
  • 2 large eggs Beaten.
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese You can use mozzarella or pepper jack for a variation.
  • 4 slices bacon Cooked and crumbled.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by lining it with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, 1/4 cup ketchup, mustard, Worcestershire sauce, chopped onion, beaten eggs, salt, and pepper. Mix well.
  3. Press half of the meat mixture into the prepared loaf pan.
  4. Sprinkle the shredded cheddar cheese and crumbled bacon over the meat layer.
  5. Top with the remaining meat mixture and press it down gently.
  6. Brush more ketchup over the top for a glaze.
Cooking
  1. Bake in the preheated oven for 60 minutes or until cooked through.
  2. Let the meatloaf rest in the pan for 10 minutes before slicing.

Notes

Serve warm with a dollop of ketchup. Pairs well with mashed potatoes, roasted veggies, or salad. Leftovers can be used in sandwiches.
