Cheese Enchiladas

Cheese Enchiladas are a comforting and delicious meal, perfect for any occasion. This high protein version is packed with flavor, made with Monterey Jack and cheddar cheese, and is great for meal prep.

Ingredients
  

Cheese
  • 1 8-ounce block Monterey Jack cheese Freshly grated (about 2 cups)
  • 1 8-ounce block Cheddar cheese Mild or medium (about 2 cups)
Sauce Ingredients
  • 1/4 cup Unsalted butter
  • 1/3 cup All-purpose flour
  • 3 cups Beef broth Unsalted or low-sodium
  • 1 1/2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • 3/4 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Paprika
Tortillas
  • 12 pieces Corn tortillas Traditional for enchiladas

Method
 

Preparation
  1. Preheat the oven to 375°F and have a greased 9x13 baking dish ready.
  2. In a mixing bowl, combine both the Monterey Jack and cheddar cheese and set aside.
Make the Sauce
  1. Add the butter to a large sauté pan over medium heat until melted.
  2. Sprinkle in the flour and whisk to combine, creating a roux.
  3. Gradually add the beef broth, whisking well to avoid lumps.
  4. Add the chili powder, cumin, salt, pepper, and paprika.
  5. Allow to simmer for 5-7 minutes until slightly thickened.
  6. Ladle a scant cup of sauce across the bottom of the casserole dish and set the remaining sauce aside.
Prepare the Tortillas
  1. Wrap 4 corn tortillas in a damp paper towel and place on a microwave-safe plate.
  2. Microwave for 30 to 45 seconds until pliable.
Stuff the Tortillas
  1. Stuff each tortilla with about 2 tablespoons of cheese, roll tightly, and place seam-side down in the casserole dish.
Add the Sauce and Bake
  1. Pour the remaining sauce over the enchiladas and top with remaining cheese.
  2. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 5 minutes.
  3. Allow to cool for about 10 minutes before serving.

Notes

Add black beans or vegetables like spinach or bell peppers for added fiber. For meal prep, consider making a double batch and freezing half. Use low-fat cheese or gluten-free tortillas as alternatives.
