Preparation
  1. In a large mixing bowl, combine the shredded chicken, taco seasoning, sour cream, shredded cheddar cheese, and chopped green chiles. Stir well to ensure an even mixture.
Making the Sauce
  1. In a saucepan over medium-high heat, add the cubed Velveeta and undrained diced tomatoes with green chiles. Stir occasionally until fully melted and smooth.
Assembly
  1. Lay each tortilla flat and fill with about three-quarters of a cup of the chicken mixture. Roll each tortilla snugly and place seam side down in a baking dish.
Baking
  1. Pour the warm queso sauce evenly over the tortillas, covering all edges. Bake at 350°F for 20-25 minutes until hot and bubbling.

Notes

For a healthier option, use whole wheat tortillas and low-fat cheese. Great for meal prep; can be frozen and reheated. Store leftovers in an airtight container for up to three days.
