- In a large mixing bowl, combine the shredded chicken, taco seasoning, sour cream, shredded cheddar cheese, and chopped green chiles. Stir well to ensure an even mixture.
Making the Sauce
- In a saucepan over medium-high heat, add the cubed Velveeta and undrained diced tomatoes with green chiles. Stir occasionally until fully melted and smooth.
Assembly
- Lay each tortilla flat and fill with about three-quarters of a cup of the chicken mixture. Roll each tortilla snugly and place seam side down in a baking dish.
Baking
- Pour the warm queso sauce evenly over the tortillas, covering all edges. Bake at 350°F for 20-25 minutes until hot and bubbling.
Notes
For a healthier option, use whole wheat tortillas and low-fat cheese. Great for meal prep; can be frozen and reheated. Store leftovers in an airtight container for up to three days.
