  • 1 head head of cauliflower, cut into florets
  • 2 cups sharp cheddar cheese, grated
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Steam the cauliflower florets until just tender, about 5-7 minutes.
  3. Meanwhile, in a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden.
  4. Gradually whisk in the milk, stirring constantly until the sauce thickens.
  5. Remove from heat and stir in the cheese until melted. Add Dijon mustard, salt, and pepper.
  6. Combine the cauliflower with the cheese sauce, then transfer to a baking dish.
  7. If desired, sprinkle breadcrumbs on top.
  8. Bake for about 20-25 minutes until golden and bubbly.
  9. Serve hot.

Notes

For a well-rounded meal, serve with a fresh side salad or alongside grilled chicken or fish. To store leftovers, keep in an airtight container in the refrigerator for up to four days or freeze for up to three months.
