Salad Ingredients
  • 2 cups grated carrots
  • 2 cups diced apples
Dressing Ingredients
  • 1/4 cup mayonnaise Can substitute with plain yogurt for a lighter version.
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup For sweetness.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine grated carrots and diced apples.
  2. In a separate bowl, mix together mayonnaise, lemon juice, honey or maple syrup, and salt and pepper.
  3. Pour the dressing over the carrot and apple mixture and toss gently to combine.
  4. Serve chilled as a side dish or light meal.

Notes

Store any leftover salad in an airtight container in the fridge for 2 to 3 days. Best eaten fresh as apples may soften over time. Freezing is not recommended.
