- In a large bowl, combine grated carrots and diced apples.
- In a separate bowl, mix together mayonnaise, lemon juice, honey or maple syrup, and salt and pepper.
- Pour the dressing over the carrot and apple mixture and toss gently to combine.
- Serve chilled as a side dish or light meal.
Notes
Store any leftover salad in an airtight container in the fridge for 2 to 3 days. Best eaten fresh as apples may soften over time. Freezing is not recommended.
