Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed. Press mixture into the bottom of a 9x9 inch baking dish.
  3. In another bowl, beat the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the prepared crust in the baking dish.
  5. Fold the chopped apples with 1 teaspoon of cinnamon and gently mix into the cheesecake mixture.
  6. Drizzle the caramel sauce over the top of the cheesecake filling.
Baking
  1. Bake for about 30-35 minutes or until the edges are golden and the center is set.
  2. Remove from the oven and allow to cool completely before slicing into bars.

Notes

For a healthier version, consider using sugar substitutes and low-fat cream cheese. These bars can be meal prepped and stored in the fridge for up to five days or frozen for three months.
