  • 20 oz cheese tortellini Approximately 5 cups uncooked.
  • 10 oz cherry tomatoes, halved Provides sweetness and color.
  • 8 oz mozzarella pearls Creamy and soft.
  • 1 c chopped spinach Packed with nutrients.
  • 1/4 c chopped basil Adds aromatic flavor.
Dressing Ingredients
  • 1/2 c olive oil Use extra virgin for best quality.
  • 2 T balsamic vinegar Adds a tangy sweetness.
  • 3-4 pcs garlic cloves, minced Enhances flavor.
  • 3/4 tsp Italian seasoning A blend of herbs.
  • 1/2 tsp salt and pepper Adjust to taste.
Optional Ingredients
  • balsamic glaze Optional for garnish.

Method
 

Cooking the Tortellini
  1. Bring a large pot of salted water to a boil.
  2. Add cheese tortellini and cook according to package instructions (3-5 minutes) until al dente.
  3. Strain the tortellini in a colander and rinse under cold water to cool.
Preparing Vegetables and Cheese
  1. While the tortellini is cooking, chop the cherry tomatoes, spinach, and basil.
  2. Combine chopped vegetables, mozzarella pearls, and minced garlic in a mixing bowl.
Mixing the Dressing
  1. In a separate bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper until smooth.
Combining All Ingredients
  1. Add cooked tortellini to the bowl with vegetables and cheese.
  2. Pour the dressing over the mixture and gently toss to combine.
Chill and Serve
  1. Let the salad chill in the refrigerator for at least 30 minutes before serving.
  2. Toss again before serving, adding more olive oil if necessary and drizzling with balsamic glaze if desired.
Storing Leftovers
  1. Store leftover salad in an airtight container in the refrigerator for up to 5 days.

Notes
