Assembly
- Begin by placing the bottom half of the focaccia on your serving plate.
- Layer a handful of arugula on top of the focaccia.
- Add the slices of fresh mozzarella cheese.
- Place the large tomato slices on top of the mozzarella.
- If desired, add the roasted cherry tomatoes and a few pickled red onions.
- Add fresh basil leaves on top.
- Drizzle extra-virgin olive oil over the top.
- Season with flaky sea salt and freshly ground black pepper to taste.
- Place the top half of the focaccia on the sandwich.
Notes
For best results, store ingredients separately until ready to assemble. Best served immediately.
