  • 3 large sweet potatoes About 1 1/2 pounds total
  • 1/2 cup packed dark brown sugar Can substitute with a lower amount for a healthier version
  • 1/2 teaspoon vanilla extract Add for flavor
  • 1/2 teaspoon ground cinnamon Warm spice for flavor
  • 1/4 teaspoon ground nutmeg Can adjust based on preference
  • 8 tablespoons salted butter Can substitute with plant-based spread for a healthier option

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Peel and cut sweet potatoes into 1-inch pieces.
  3. Boil sweet potatoes until slightly soft, about 10 minutes.
  4. Transfer yams to a baking dish.
Making the Sauce
  1. Mix 3/4 cup warm reserved cooking water with brown sugar and vanilla.
  2. Stir in cinnamon and nutmeg.
  3. Pour the sauce over the potatoes and top with butter.
Baking
  1. Bake for 5 minutes.
  2. Toss sweet potatoes to combine with the sauce.
  3. Bake for another 10 minutes until fork-tender.
  4. Cool for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave. For longer storage, freeze for up to 3 months.
