Preparation
- Preheat the oven to 350°F.
- Peel and cut sweet potatoes into 1-inch pieces.
- Boil sweet potatoes until slightly soft, about 10 minutes.
- Transfer yams to a baking dish.
Making the Sauce
- Mix 3/4 cup warm reserved cooking water with brown sugar and vanilla.
- Stir in cinnamon and nutmeg.
- Pour the sauce over the potatoes and top with butter.
Baking
- Bake for 5 minutes.
- Toss sweet potatoes to combine with the sauce.
- Bake for another 10 minutes until fork-tender.
- Cool for 5 minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave. For longer storage, freeze for up to 3 months.
