  • 6 medium sweet potatoes, cooked
  • 1/4 cup unsalted butter can be replaced with a lower-calorie butter
  • 1 cup brown sugar for a healthier version, substitute with low-calorie sweeteners
  • 1/4 cup water
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Wash, peel, and scrub the sweet potatoes.
  2. Place them in a pot and cover with water.
  3. Bring to a boil, then reduce to a simmer. Cook for 30 to 45 minutes, depending on their size, until they are fork tender.
  4. Preheat oven to 350°F.
  5. Cut cooled sweet potatoes into 1/2 inch rounds and arrange in a 3 quart casserole dish.
Making the Glaze
  1. Add butter, sugar, water, and salt to a small saucepan and heat to boiling.
  2. Boil for 5 minutes, stirring often.
Baking
  1. Pour glaze over sweet potatoes.
  2. Bake for 45 minutes, uncovered.
  3. Serve hot.

Notes

For a lower-calorie version, reduce the sugar or use a lower-sugar sweetener. This dish is naturally gluten-free with pure brown sugar and unsalted butter.
