Method
Cooking the Pasta
- Cook the pasta according to the package instructions and set aside.
Preparing the Chicken
- Season the chicken breasts with Cajun seasoning.
- In a skillet, heat olive oil over medium heat and add the chicken. Cook until browned and cooked through, about 6-7 minutes per side. Remove chicken from the skillet and let it rest.
Cooking the Vegetables and Sauce
- In the same skillet, add bell peppers and onions, and sauté until softened.
- Pour in heavy cream and chicken broth, and bring to a simmer. Stir in Parmesan cheese and mix until the sauce thickens.
Combining Everything
- Slice the chicken and add it back to the skillet along with the cooked pasta. Toss everything together until well combined.
- Season with salt and pepper to taste, and garnish with fresh parsley before serving.
Notes
Serve hot and add extra Parmesan or a sprinkle of fresh parsley as garnish. For leftovers, store in an airtight container in the fridge for up to 3 days. Reheat gently to avoid breaking the cream sauce.
