Method
 

Preparation
  1. Peel and slice the carrots into even pieces.
  2. In a skillet, melt the butter over medium heat.
Cooking
  1. Add the sliced carrots and cook for about 5 minutes.
  2. Sprinkle brown sugar and cinnamon over the carrots.
  3. Stir to coat the carrots evenly and continue to cook for another 10-15 minutes, stirring occasionally, until the carrots are tender and glazed.
  4. Season with salt to taste and serve warm.

Notes

Storage: Place leftovers in an airtight container in the fridge for up to 3-5 days. For freezer storage, spread on a baking sheet to freeze for about an hour before transferring to a freezer bag, lasting up to three months. For meal prep, peel and slice the carrots ahead of time, storing them in cold water.
