Cooking Process
- Heat a skillet over medium heat and cook the bacon until crispy. If using bacon bits, sauté for about 3-4 minutes.
- In a mixing bowl, whisk the 4 eggs with a pinch of salt and pepper.
- Pour the whisked eggs into the skillet and scramble until just set.
- Lay one tortilla flat, add scrambled eggs, bacon pieces, and grated cheese on half, then fold the tortilla.
- Heat 2 tablespoons of canola oil in the skillet and cook the folded quesadilla until golden brown, about 2-3 minutes per side.
- Remove from skillet, let cool briefly, cut into wedges, and serve hot.
Notes
For meal prep, make a batch on Sunday, freeze, and reheat throughout the week. Store leftovers in an airtight container in the refrigerator for up to 3 days.
