Preparation
  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  3. Push the vegetables to the side and pour in the beaten eggs, scramble until fully cooked.
  4. Add the cooked rice and soy sauce, mixing well.
  5. Stir in the chopped green onions, season with salt and pepper.
  6. Cook for another 2-3 minutes until heated through.

Notes

To make it healthier, use brown rice. This dish is great for meal prep; store in airtight containers in the fridge for up to 4 days. For variations, consider adding lean meat like chicken or shrimp for a heartier meal. Add chili flakes or sriracha for a spicier kick.
