Preparation
- Preheat the oven to 400 degrees F.
- Wash the beets and place them on individual sheets of aluminum foil.
- Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
- Fold into loose packets and transfer to a sheet pan.
- Roast for 50-60 minutes until easily pierced with a knife.
- Let cool slightly and rub off the skins, then slice thinly.
Assembly and Cooking
- Drizzle the remaining olive oil on both sides of the bread. Spread goat cheese and sprinkle scallions on one side of each slice.
- Arrange beets and arugula, then top with the remaining bread.
- Cook on a skillet or griddle over medium heat until both sides are browned and toasted, about 3-4 minutes per side.
Notes
Sandwich can be served warm or at room temperature. Perfect for meal prep and can be stored for up to 3 days in the fridge.
