Ingredients
  

For the Roasted Beets
  • 5-6 medium medium red and yellow beets, greens removed
  • 2 tablespoons olive oil Divided
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
For the Sandwich Assembly
  • 4 slices crusty bread Use whole grain or gluten-free for healthier options
  • 3 ounces goat cheese, room temperature
  • 1 whole scallion, thinly sliced
  • 1 handful arugula

Method
 

Preparation
  1. Preheat the oven to 400 degrees F.
  2. Wash the beets and place them on individual sheets of aluminum foil.
  3. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
  4. Fold into loose packets and transfer to a sheet pan.
  5. Roast for 50-60 minutes until easily pierced with a knife.
  6. Let cool slightly and rub off the skins, then slice thinly.
Assembly and Cooking
  1. Drizzle the remaining olive oil on both sides of the bread. Spread goat cheese and sprinkle scallions on one side of each slice.
  2. Arrange beets and arugula, then top with the remaining bread.
  3. Cook on a skillet or griddle over medium heat until both sides are browned and toasted, about 3-4 minutes per side.

Notes

Sandwich can be served warm or at room temperature. Perfect for meal prep and can be stored for up to 3 days in the fridge.
