Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until they soften.
- Add ground beef to the skillet and cook until browned, draining excess fat.
- Stir in black beans and half of the enchilada sauce. Season with salt and pepper.
- In a baking dish, spread a thin layer of enchilada sauce on the bottom.
- Layer 5 corn tortillas, half of the beef mixture, half of the cheese, and more enchilada sauce. Repeat layers.
- Finish with remaining tortillas, enchilada sauce, and cheese on top.
Baking
- Cover the dish with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes and garnish with green onions or cilantro.
Serving
- Slice and serve warm.
Notes
Great for meal prep; can be made ahead and stores well. To make it healthier, consider using lean ground beef or turkey. Can freeze before baking for up to three months.
