  • 10 pieces corn tortillas Gluten-free option.
  • 2 cups shredded cheese Cheddar or Mexican blend.
  • 1 medium onion, diced Adds sweetness.
  • 2 cloves garlic, minced Enhances the flavor.
  • to taste salt and pepper For seasoning.
  • 1 tablespoon olive oil Used for sautéing.
  • to taste chopped green onions or cilantro For garnish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until they soften.
  3. Add ground beef to the skillet and cook until browned, draining excess fat.
  4. Stir in black beans and half of the enchilada sauce. Season with salt and pepper.
  5. In a baking dish, spread a thin layer of enchilada sauce on the bottom.
  6. Layer 5 corn tortillas, half of the beef mixture, half of the cheese, and more enchilada sauce. Repeat layers.
  7. Finish with remaining tortillas, enchilada sauce, and cheese on top.
Baking
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let cool for a few minutes and garnish with green onions or cilantro.
Serving
  1. Slice and serve warm.

Notes

Great for meal prep; can be made ahead and stores well. To make it healthier, consider using lean ground beef or turkey. Can freeze before baking for up to three months.
