Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a small bowl, whisk together balsamic vinegar, honey or maple syrup, dried basil, oregano, and minced garlic.
Cooking
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
  2. Place the chicken breasts in the prepared baking dish and pour the balsamic sauce over the chicken. Scatter halved cherry tomatoes around.
  3. Bake in the preheated oven for 20-25 minutes until almost cooked through.
  4. Remove from oven, sprinkle shredded mozzarella cheese over each breast, and bake for an additional 5-10 minutes until cheese is bubbly and chicken reaches an internal temperature of 165°F (75°C).
  5. Garnish with fresh basil or parsley if desired, and serve warm.

Notes

For a lighter option, reduce the amount of cheese or use low-fat mozzarella. This dish is excellent for meal prep and can be stored in an airtight container in the fridge for up to 4 days.
