Preparation
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Season the chicken breasts generously with salt and pepper on both sides.
- In a small bowl, whisk together balsamic vinegar, honey or maple syrup, dried basil, oregano, and minced garlic.
Cooking
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
- Place the chicken breasts in the prepared baking dish and pour the balsamic sauce over the chicken. Scatter halved cherry tomatoes around.
- Bake in the preheated oven for 20-25 minutes until almost cooked through.
- Remove from oven, sprinkle shredded mozzarella cheese over each breast, and bake for an additional 5-10 minutes until cheese is bubbly and chicken reaches an internal temperature of 165°F (75°C).
- Garnish with fresh basil or parsley if desired, and serve warm.
Notes
For a lighter option, reduce the amount of cheese or use low-fat mozzarella. This dish is excellent for meal prep and can be stored in an airtight container in the fridge for up to 4 days.
