  1. Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
  2. In a large bowl, combine sliced potato wedges with olive oil and toss to coat evenly.
  3. In a small bowl, whisk together salt, garlic powder, and Italian seasoning. Sprinkle over potato wedges along with parmesan cheese while tossing to ensure even coating.
Baking
  1. Arrange seasoned wedges on the prepared baking sheet in a single layer with skin sides down.
  2. Bake for 25-35 minutes until golden brown and fork-tender. Garnish with fresh parsley if desired before serving.

Notes

These wedges can be served with a homemade yogurt dip or a light salad to keep meals healthy. They can be stored in an airtight container in the fridge for up to 3 days or frozen for 3 months.
