  • 4 large eggs
  • 200 g feta cheese Use block feta for better melting
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach Washed and dried
  • 2 tablespoons olive oil Good quality recommended
  • Salt and pepper to taste
  • Fresh herbs (optional) For garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place the cherry tomatoes and spinach. Drizzle with olive oil and season with salt and pepper.
  3. Crumble the feta cheese over the tomatoes and spinach.
  4. Make four small wells in the mixture and crack an egg into each well.
Cooking
  1. Bake in the oven for 15-20 minutes, or until the eggs are set to your liking.
Serving
  1. Garnish with fresh herbs if desired, and serve warm.

Notes

Serve with crusty bread or toast for dipping into the yolk. This dish does not freeze well.
