  • 2 tbsp additional apple cider or juice For the glaze.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, baking powder, kosher salt, and ground cinnamon. Whisk together until fully mixed.
  3. In another bowl, mix together the melted butter, granulated sugar, egg, and vanilla extract. Stir in the unsweetened applesauce until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to keep fritters light.
  5. Gently fold in the diced apples until evenly distributed.
  6. Line a baking tray with parchment paper. Drop spoonfuls of fritter dough onto the tray, spacing them well apart.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
Glazing
  1. While the fritters are baking, whisk together the powdered sugar and apple cider until smooth to prepare the glaze.
  2. Adjust the consistency as necessary by adding more cider or sugar.
  3. Once baked, remove the fritters from the oven, allow them to cool slightly, and drizzle the glaze over the warm fritter bites before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for longer storage. Variations include adding nuts or raisins.
