Preparation
- Place the ingredients into your blender.
- Blend on medium-high speed until smooth.
- Taste the soup and add more salt if needed.
- If you wish to serve it warm, pour the soup into a pot and heat it gently on medium heat, taking care not to boil it.
- Serve the soup on its own or add any of the optional toppings for extra flavor and texture.
Notes
The soup can be stored in an airtight container in the refrigerator for up to 3 days. For freezing, leave out toppings; it can be frozen for up to 3 months.
