Ingredients
  

Main Ingredients
  • 4 cups stock Use vegetable or chicken stock
  • 1/4 cup fresh lime juice Freshly squeezed for best flavor
  • 1/4 cup cilantro Chopped
  • 2 ripe avocados Skin and pit removed
  • 2 green onions Use the green part only
  • 1 clove garlic
  • 1 teaspoon sea salt Adjust to taste
  • 1/4 teaspoon ground cumin
Optional Toppings
  • diced avocado For added texture
  • toasted pepitas For a crunchy topping
  • hot sauce or chili oil For some heat
  • croutons For additional crunch
  • crispy bacon Optional for non-vegetarians
  • cilantro For garnish

Method
 

Preparation
  1. Place the ingredients into your blender.
  2. Blend on medium-high speed until smooth.
  3. Taste the soup and add more salt if needed.
  4. If you wish to serve it warm, pour the soup into a pot and heat it gently on medium heat, taking care not to boil it.
  5. Serve the soup on its own or add any of the optional toppings for extra flavor and texture.

Notes

The soup can be stored in an airtight container in the refrigerator for up to 3 days. For freezing, leave out toppings; it can be frozen for up to 3 months.
