Preparation
- Wash the potatoes thoroughly and place them in a pot, covering with water. Boil on medium heat for 15–20 minutes until soft.
- Once soft, drain the water, peel the potatoes, and let them cool slightly.
- In a frying pan, heat vegetable oil over medium heat, add chopped onions, and sauté until translucent (3–5 minutes). Add minced garlic and sauté for an additional minute or until fragrant.
- In a mixing bowl, mash the boiled potatoes to a smooth consistency. Mix in the sautéed onions and garlic.
- Add shredded cheese, salt, and pepper to the potato mixture and blend well.
- Take a corn tortilla, spoon the filling into the center, fold in half, and press gently to seal. Repeat with remaining tortillas.
Cooking
- In the frying pan, add more vegetable oil and heat on medium heat. Fry the folded tacos until golden brown and crispy, 2–3 minutes per side.
- Drain the fried tacos on a plate lined with paper towels to absorb excess oil.
- Serve hot with your favorite dipping sauces or toppings.
Notes
For meal prep, cook a big batch of filling ahead of time. Store in the fridge and fry when ready to eat. These tacos can also be baked in an air fryer for a healthier option.
