Preparation
- Chill the meat and equipment: Place cubed meat and the food processor blade in the freezer for 30 to 45 minutes until very cold.
- Grind and emulsify: Process the meats until finely ground. Blend all ingredients, including ice and spices, until the mixture is smooth, sticky, and well emulsified.
- Prepare the loaf: Line or grease a loaf pan. Spoon in the meat paste and smooth the top with wet hands. Score the surface with a crisscross pattern.
Cooking
- Bake: Preheat the oven to 325 degrees F (160 degrees C). Bake for 60 to 70 minutes until the internal temperature reaches 165 degrees F (74 degrees C) and the top is golden.
- Cool and slice: Rest for 10 to 15 minutes. Slice and serve hot or cold.
Notes
Keep everything cold to avoid a grainy texture. Use a thermometer for perfect doneness. Serve with sweet mustard, pretzel, or a fried egg. This dish can be stored in the fridge for up to 3 days, and you can freeze it for up to 3 months.
