Meat ingredients
  • 500 g pork shoulder, cubed Use freshly cubed pork shoulder for the best flavor.
  • 250 g lean beef chuck, cubed Choose lean cuts to maintain a healthier meatloaf.
  • 250 g pork back fat, cubed Adds richness and moisture to the meatloaf.
Flavoring ingredients
  • 1 small onion, finely grated or sautéed Can be sautéed for additional flavor.
  • 1.5 tsp salt Adjust to taste.
  • 1 tsp white pepper
  • 0.5 tsp dried marjoram
  • 0.25 tsp ground nutmeg Adds a warm spice flavor.
  • 0.5 tsp onion powder
Binding ingredients
  • 150 ml crushed ice or ice-cold water Keeps the meat mixture cold for better texture.
  • 1 tbsp potato starch or cornstarch Acts as a binder, consider using almond flour for a low-carb version.

Method
 

Preparation
  1. Chill the meat and equipment: Place cubed meat and the food processor blade in the freezer for 30 to 45 minutes until very cold.
  2. Grind and emulsify: Process the meats until finely ground. Blend all ingredients, including ice and spices, until the mixture is smooth, sticky, and well emulsified.
  3. Prepare the loaf: Line or grease a loaf pan. Spoon in the meat paste and smooth the top with wet hands. Score the surface with a crisscross pattern.
Cooking
  1. Bake: Preheat the oven to 325 degrees F (160 degrees C). Bake for 60 to 70 minutes until the internal temperature reaches 165 degrees F (74 degrees C) and the top is golden.
  2. Cool and slice: Rest for 10 to 15 minutes. Slice and serve hot or cold.

Notes

Keep everything cold to avoid a grainy texture. Use a thermometer for perfect doneness. Serve with sweet mustard, pretzel, or a fried egg. This dish can be stored in the fridge for up to 3 days, and you can freeze it for up to 3 months.
